Working knowledge of: Federal food safety programs including Sanitation Standard Operating Procedures (SSOP), HACCP and microbiological testing. Responsible for maintaining familiarity and understanding of USDA policies and procedures regarding USDA inspection protocol. Meat industry production methods, including harvesting, fabrication, and further processing of beef, pork, and lamb is required. General knowledge of the use of standard office equipment (computers, copiers, phones) and standard office software packages such as, Microsoft Office (Word, Excel, and Outlook).
REQUIRED SKILLS: Must possess: Familiarity with all types of meat processing equipment and the ability to operate that equipment in a safe and efficient manner, as well as motor vehicles necessary to effectively and efficiently work in the Meats Lab.
REQUIRED ABILITIES: Must have the ability to: Perform physical labor in a refrigerated environment. Safely slaughter, fabricate and further process meat products for sale under USDA guidelines. Maintain clear and concise records and inventory reports, i.e. food safety records. Assume an active role in the instructional process, assisting laboratory instructors with the setting up and conducting of livestock laboratory classes, and advising students on related enterprise projects. Develop a systematic safety training program for students. Supervise, train, and oversee students. Coordinate the practical program aspects with the academic program and student learning process. Travel to meetings/conferences as needed. Read and write at a level appropriate to the duties of the position. Adhere to all applicable safety practices. Establish and maintain cooperative working relationships with a diverse population of staff, faculty, students and others. Adjust to change (i.e. work environment, technology). Function cooperatively and productively as a member of a unit. Apply the knowledge and skills listed above and the demonstrated ability to perform assigned job duties.
